No-Bake Protein Balls (Paleo, Whole30, Vegan)

Healthy date and chocolate energy balls. Made in one bowl, no baking and protein-packed.

Ingredients

  • 1 cup raw almonds
  • 2 cups pitted medjool dates
  • 1/4 cup cocoa powder
  • 2 tablespoons coconut oil
  • 1/4 cup coconut

Instructions

  • In a food processor, add almonds and process until they are broken up. Take care not to over-process or you will end up with nut butter.
  • Add dates, coconut oil and cocoa powder. Continue processing until well combined, stopping regularly to scrape down the sides of the bowl to make sure it is fully mixed.
  • With damp hands, form the batter into small balls and roll in coconut. Place into air-tight container and refrigerate for at least 15 minutes.

Notes

These No-Bake Protein Balls (Paleo, Whole30, Vegan) should be kept refrigerated.  They can also be frozen, and will keep for up to 3 months when stored in a sealed container.
