No-Bake Protein Balls (Paleo, Whole30, Vegan)
Healthy date and chocolate energy balls. Made in one bowl, no baking and protein-packed.

In a food processor, add almonds and process until they are broken up. Take care not to over-process or you will end up with nut butter.
Add dates, coconut oil and cocoa powder. Continue processing until well combined, stopping regularly to scrape down the sides of the bowl to make sure it is fully mixed.
With damp hands, form the batter into small balls and roll in coconut. Place into air-tight container and refrigerate for at least 15 minutes.
These No-Bake Protein Balls (Paleo, Whole30, Vegan) should be kept refrigerated. They can also be frozen, and will keep for up to 3 months when stored in a sealed container.
